We LOVE tacos at our house.

So much so that I am SICK of eating tacos! I had to find an alternative. A little google search and I found a recipe that I had all the ingredients for. Taco Meatloaf

We have restrictions on our diet. We eat Gluten Free, and low Sugar and Diary. I had to make a few substitutions.

• ½ cup milk- for this ingredient I used almond milk. Realistically I should find a dairy free cheese alternative but still have not made the leap yet. URGH…WHY DOES CHEESE HAVE TO BE SO GOOD!?!

• Tortilla chips- I made sure to use corn tortilla chips. I just grabbed a handful out of the bag. I put the chips into a zip lock and hit them a few times to break them up. Not entirely, but enough. I thought that a light smash would keep the chips kind of crunchy; not the case so SMASH AWAY. If you didn't have chips you could easily substitute bread of crackers. Just need to have something as a binder.

• Salsa is not necessary also. I suppose it is to add to the seasoning of the meatloaf, but a little more taco seasoning would achieve this goal as well.

The best part about this dish is the toppings. That is really what is going to taste like a taco dish SO GO NUTS. I added sour cream, salsa, and jalapenos. You could also add more cheese too. The last 10 min of cooking you could add cheese to the top to melt or more salsa. I prefer to leave those off to get a little extra crisp to the top of the meatloaf.

Another alternative to this dish is to make it in a Ninja Foodi. I love making meals in my Foodi. I start out by pressuring cooking it for about 20 minutes at 390F. Just put a cup of water or stock into the bottom. After the pressuring cooking is done, put it on air crisp for another 10-15 minutes. This will get the outside even more crispy than just in the oven. It also allows the excess fat to drain.
